🌶️ Fajita Chicken Casserole 🐔
Ingredients:
- 2 lbs boneless, skinless chicken breasts, cut into strips
- 1 packet fajita seasoning mix
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 2 cups shredded Mexican cheese blend
- 1 cup salsa
- 1/2 cup sour cream
- 2 tablespoons olive oil
- Fresh cilantro, chopped (optional for garnish)
Directions:
Prepare the Chicken and Veggies:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken strips and cook until browned, about 5-7 minutes.
- Add the sliced bell peppers and onion to the skillet. Cook for an additional 5 minutes until the vegetables are tender.
Assemble the Casserole:
- In a large mixing bowl, combine the cooked chicken and vegetables with the fajita seasoning mix, salsa, and half of the shredded cheese.
- Transfer the mixture to a greased 9×13 inch baking dish.
Bake:
- Spread the sour cream evenly over the top of the casserole. Sprinkle the remaining shredded cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Serve:
- Garnish with fresh chopped cilantro if desired. Serve hot and enjoy your Fajita Chicken Casserole! 🌶️🐔
