🧀 Cheesy Tater Tot Meatloaf Casserole 🥔
Ingredients:
- 1 1/2 lbs ground beef
- 1/2 cup onion, finely chopped
- 1/2 cup bell pepper, finely chopped
- 1 packet meatloaf seasoning mix
- 1 egg
- 1/2 cup breadcrumbs
- 1/4 cup ketchup
- 2 cups shredded cheddar cheese, divided
- 1 (32 oz) bag frozen tater tots
- 1/4 cup barbecue sauce (optional)
Directions:
Prepare the Meatloaf Base:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef, chopped onion, chopped bell pepper, meatloaf seasoning mix, egg, breadcrumbs, and ketchup. Mix well until all ingredients are thoroughly combined.
- Spread the meat mixture evenly in a greased 9×13 inch baking dish.
Add Cheese and Tater Tots:
- Sprinkle 1 cup of shredded cheddar cheese over the meatloaf mixture.
- Arrange the frozen tater tots in a single layer on top of the cheese.
Bake:
- Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
- Remove from the oven and sprinkle the remaining cup of shredded cheddar cheese over the top. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Serve:
