😋 Cheesy Chicken Rotel Pasta 😋
Ingredients:
- 1 (16oz) box of pasta (mini penne works great)
- 32oz Velveeta cheese
- 2 cups heavy whipping cream
- 6-8 boneless, skinless chicken thighs
- 1 stick of butter
- 2 cans Rotel
- 1 (8oz) block of cream cheese
Directions:
- Prepare the Chicken:
- Toss chicken thighs in olive oil and your favorite seasonings (I used smoked paprika, onion powder, ground turmeric, garlic powder, parsley, and black pepper).
- Bake at 375°F for around 30-35 minutes. Let the chicken cool and then shred it.
- Cook the Pasta:
- Boil the pasta according to the package instructions. Drain and add half a stick of butter to the hot pasta.
- Make the Cheese Sauce:
- In a large pot, combine Velveeta, heavy cream, the remaining half stick of butter, cream cheese, and Rotel.
- Stir over medium heat until everything is melted and well combined.
- Combine and Serve:
- Add the shredded chicken and cooked pasta to the cheese sauce.
- Stir until everything is evenly coated with the cheesy goodness.
