Peanut Butter Lunch Lady Cookie Bars
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup packed brown sugar
2 teaspoons vanilla extract
1 cup creamy peanut butter
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2 cups quick-cooking oats
1 cup semi-sweet chocolate chips
1/2 cup chopped peanuts (optional for topping)
Directions:
Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and peanut butter.
Combine the flour, baking soda, and salt; stir into the peanut butter mixture until well blended. Mix in the oats and chocolate chips.
Spread the dough evenly in the prepared pan. Sprinkle with chopped peanuts if desired.
Bake for 25-30 minutes or until the edges are golden brown. Allow to cool in the pan before cutting into bars.
