Rustic Italian Sausage with Peppers and Onions over Garlic Mashed Potatoes

Ingredients:

  • 1 lb Italian sausage
  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tbsp butter
  • 1/4 cup grated Parmesan cheese

Directions:

  1. Cook the Sausage:
  • Heat olive oil in a large skillet over medium heat.
  • Add the Italian sausage, breaking it into pieces, and cook until browned.
  1. Prepare the Peppers and Onions:
  • Add sliced bell peppers and onion to the skillet.
  • Cook until the vegetables are tender.
  1. Season:
  • Stir in minced garlic, dried basil, and oregano.
  • Cook for another minute until fragrant.
  1. Make the Mashed Potatoes:
  • Boil the cubed potatoes in salted water until tender, about 20 minutes.
  • Drain the potatoes and mash them with milk, butter, and grated Parmesan cheese until smooth.
  1. Serve:
  • Serve the sausage and peppers mixture over the garlic mashed potatoes.
