Summer Corn and Zucchini Chowder

🌞 Summer Corn and Zucchini Chowder 🍲

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 medium zucchinis, diced
  • 4 ears of fresh corn, kernels removed (or 3 cups frozen corn)
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Directions:

Prepare the Vegetables:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.

Add Zucchini and Corn:

  1. Stir in the diced zucchini and fresh corn kernels. Cook for about 5-7 minutes, until the vegetables are tender.

Simmer the Chowder:

  1. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 10 minutes.
  2. Stir in the heavy cream and fresh thyme. Season with salt and pepper to taste. Simmer for an additional 5 minutes until the chowder is heated through and slightly thickened.

Serve:

  1. Ladle the chowder into bowls and garnish with fresh parsley. Serve warm and enjoy the flavors of summer! 🌽🥒
