🌞 Summer Corn and Zucchini Chowder 🍲
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 medium zucchinis, diced
- 4 ears of fresh corn, kernels removed (or 3 cups frozen corn)
- 3 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon fresh thyme
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
Directions:
Prepare the Vegetables:
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
Add Zucchini and Corn:
- Stir in the diced zucchini and fresh corn kernels. Cook for about 5-7 minutes, until the vegetables are tender.
Simmer the Chowder:
- Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 10 minutes.
- Stir in the heavy cream and fresh thyme. Season with salt and pepper to taste. Simmer for an additional 5 minutes until the chowder is heated through and slightly thickened.
Serve:
