Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 cup shredded cheddar cheese
  • 1 package wonton wrappers
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • Chopped green onions, for garnish
  • Chopped cilantro, for garnish

Directions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin.
  2. Cook Beef: In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat, then stir in the taco seasoning and diced tomatoes with green chilies. Cook for another 2-3 minutes until well combined.
  3. Assemble Cupcakes: Place a wonton wrapper in each muffin cup, pressing it down to form a cup shape. Add a spoonful of the beef mixture into each cup, then sprinkle with shredded cheddar cheese. Place another wonton wrapper on top, add another layer of beef mixture, and top with more cheese.
  4. Bake: Bake in the preheated oven for 15-18 minutes, or until the wonton wrappers are golden brown and the cheese is melted.
  5. Garnish and Serve: Let the taco cupcakes cool slightly before removing them from the muffin tin. Top each cupcake with a dollop of sour cream, a spoonful of salsa, and a sprinkle of chopped green onions and cilantro.
